Matcha is the type of tea that is used in the tea ceremony. It is made by stone grinding the dried tea leaves called "Tencha" to a fine powder. Tencha is made in the same way as gyokuro, but by drying without rolling. You need one tea spoon (2gms) of matcha powder for 80ml to 100ml of hot water. Simply whisk the mixture with a chasen (a bamboo whisk) to frothy. You dont need to be a Japanese tea master to make a frothy bowl of matcha tea. It becomes easier after a few tries. Green tea nutrition: Aqueous components are Catechin, Caffeine, Vitamin C, Theaine, and R-amino butyric acid. Non-aqueous components such as B-carotene,Vitamin E, and Dietary fiber are thrown away when green tea is drunk although much of them are contained in tea leaves. MATCHA Powdered green tea has benefit of all the components and the highest amount of retained nutrients of all green teas.
