ASAMUSHI Sencha means lightly steamed Japanese tea leaves; traditional Japanese tea making method that has subtle bitterness and good body of the green tea.

FUKAMUSHI Sencha means deeply steamed Japanese tea leaves; makes richer but bitter less taste. Fukamushi Sencha looks more powdery and the color of liquor is deeper green than ordinary Asamushi Sencha.

Chiran sencha produced in old samurai town of Chiran in Kagoshima prefecture (in Kyushu island) at the southern Japan. Kagoshima is known for the second biggest production of Japanese tea. The region's nutrient-rich volcanic soil produces unique aromatic intense deep green tea. Full-bodied, and smooth with a moderate astringency level. Produced in Kagoshima pref.

We receive many samples from Tea producers in Japan. We taste them and to see if the quality meets our standard and project the popularity. We very liked this Chiran sencha coming from Southern Japan even we are big fond of Shizuokacha

Shincha - the first tea of the year. We celebrate the first tea harvest of the year.Japanese green tea is usually harvested two to four times every year during Spring to Autumn. The first pick, Shincha, has the most refreshing aroma immediately after being harvested.

The arrival of the first harvest is very important in Japan and is simillar to the arrival of Beajolais Noveau Wine in France. On the first day of Spring, on February 4th this year in Japan, a countdown is started to track the arrival of the first harvest of green tea. The countdown lasts 88 days until May 2nd. Legend has it that tea harvested on the 88th night after the first day of Spring willhelp the drinker aintain good health for the whole year. Many Japanese people send their friends Shincha as gifts hoping to bless the recipient with good health for the year.

SHINCHA Special Edition - Ouhashiri

Shincha is the first tea of the year and its known for the fresh aroma and flavor. The top grade Oohashiri is so precious; Only 25kg of these young tea leaves came from the 1200 square meter tea plantation (hand picking). The Tea plants are dormant during the winter and store the nutrients from the fertile soil until the Spring. In the Spring the first flush comes out - "Shincha" which has a unique aroma hose freshness can only be appreciated at this time of year.

Following review are from Matt, Mattchas Blog. The dry leaf smells sharp and sweet with an underlying mellow freshness. A light scoop of these leaves makes their way into the pot. The cooled water follows.The first infusion reveals mellow cantaloupe notes in a creamy broth. The lips numb with a feeling in the mouth that covers it. The sweetness is slight and manifests mainly on the breath. The second infusion has more of that round cantaloupe tone that fills the mouth. Being the second infusion, this one feels a touch fuller in the mouth with a slight chalkiness. The third infusion is longer than the first few and pushes out much of the same. It's flavour gravitates to more of the typical lime green tea taste than the mellow melon flavours. It is less creamy and mellow too and more chalky. It finishes sweet. The fourth infusion moves from chalky to sweet then to a slightly acidic citrus flavour. There is also those lime flavours that reach in. This tea is even taken to fifth and sixth infusions where the tea is mainly just creamy, chalky, and smooth with still some mouthfeel worth exploring. The lack of flavour indicates the end of this session. While cleaning the leaves from the pot one feels focused and relaxed.
